I wonder if there will be a vehicle based on the Jaxi in a future Mario Kart installment, similar to the Yoshi bike.

There are actually a lot of culture references in mario games, even those outside of Odyssey(I believe Odyssey has the most, because of all the different areas and locations). Some of them are pretty interesting to learn.

Nintendo sure has done their homework. Jaguars are indeed part of Mexican culture.
The Jaxi is based on the statues seen in South American art. (Mayan, Olmec, and Aztec)
